Ingredients
Pasta & Seafood
- 180 g (6.3 oz) linguine, durum wheat semolina pasta, uncooked
- 300 g (10.5 oz) large shrimp (about 15), shelled and deveined
Produce & Aromatics
- 150 g (5.3 oz) Roma tomatoes, fresh (washed, dried, and diced) or crushed
- 150 g (5.3 oz) zucchini, rinsed and cubed small
- 10 g (0.4 oz) garlic (2 cloves), peeled, rinsed, and sliced
- 2 lemon slices
- 1 tbsp fresh basil, rinsed and chiffonade
Liquids, Oils & Spices
- 60 ml (0.25 cup) dry white wine
- 15 ml (0.5 fl oz / 1 tbsp) extra virgin olive oil (EVOO)
- 0.25 tsp salt and pepper mix (Medium density)
- 1 pinch dried red pepper flakes
- 125 ml (0.5 cup) shrimp broth
- 1 tsp flour (optional, for extra sauce)
Instructions
- Prepare and Start Water: Prepare all ingredients (dice tomatoes, cube zucchini, slice garlic, chiffonade basil). Fill a stockpot 3/4 full with water, add 1/2 tsp of salt, and bring to a rolling boil.
- Cook Pasta: Once the water is boiling, add the linguine and cook according to package directions until al dente. (Start the sauce immediately after adding pasta).
- Sauté Vegetables: In a separate sauté pan, heat the extra virgin olive oil (EVOO) over medium heat. Add the sliced garlic and zucchini. Sauté for 2–3 minutes, stirring occasionally.
- Add Shrimp: Add the shrimp to the pan and continue cooking for 3 more minutes, stirring occasionally, until they start turning pink.
- Deglaze with Wine: Pour in the dry white wine. Stir and allow the liquid to simmer and evaporate for 1–2 minutes.
- Simmer the Sauce: Add the tomatoes, salt and pepper mix, lemon slices, basil, and red pepper flakes. Reduce the heat to low, cover the pan, and cook for 3 minutes, stirring occasionally. The shrimp should be fully pink and opaque (reaching an internal temperature of 63°C/145°F).
- Reserve and Drain: Before draining, reserve about 125 ml (1/2 cup) of the pasta water. Drain the linguine immediately afterward.
- Combine and Emulsify: Add the drained pasta directly to the sauce pan. Mix well to combine all ingredients. Over medium heat, add the reserved pasta water gradually until a nice, creamy sauce forms an emulsion.
- Plate and Garnish: Use tongs to plate the linguine, topping it with the remaining sauce. Serve immediately, garnished with more fresh basil.
